FESTIVE STUFFING RECIPE

Ingredients

  • 1 large loaf of bread (white or brown)
  • 1 cup melted butter
  • 2 stalks of celery, chopped finely
  • 1 large onion (chopped finely)
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1/2 a cup or so of vegetable broth
  • 1 tablespoon sage

Instructions

Cut the bread up into bite-sized cubes and put it in a large bowl. Using a few tablespoons of the melted butter, sauté the celery and onions until soft but not brown. Add the garlic and sauté for a few minutes more. Pour the butter, vegetables, salt and pepper, and sage into the bowl with the bread. Stir very well…it takes a while for everything to blend. Add some broth to the mixture if it is too dry.  It should be nicely moist. Don’t add too much broth. Mixing it with your hands works very well.

Line a baking dish or loaf pan with parchment paper. Press the mixture into the pan. Cover well with foil and bake at 350 degrees for 45 minutes to 1.5 hours until all the stock is absorbed.

You can prepare this mixture the day before and store it in the fridge. It’s great as a side dish, so non-meat eaters can enjoy it as well.

This recipe can be doubled. It tends to be a festive favourite.
